It's a small organization, basically family oriented. Thousands and thousands of sandwiches per day. I mean, we sell more smoked meat than all the other deli's in Montreal put together. Our smoked meat is made here. We bring it in. It's a raw piece of brisket. It marinades for ten days with our secret recipe and spices. We smoke it for eight hours. We steam it for three hours. You eat it within seconds.
