I think for me what I, it's probably the memories I had when I was a kid. I remember my grandmother, actually didn't start cooking until much later, until I decided to switch careers and cook. But, I remember my grandmother always rendering pieces of pork fat to cook any kind of food cuz I'm Filipino and we use a lot of pork in our household. And I remember how happy it made me just to eat those little pieces of chichirone's when I was younger.
