The easiest way to make dashi at home is you need three basic ingredients. One is bonito flakes, kombu, water. And I like to season mine with a little bit of white soy. The easiest way that I've learned to do it is you start a pot of water medium high. Steam the kombu in there for ten minutes. Throw as much or as little Bonito flakes as you'd like to be to I guess the smoke flavor to come off. And take it off the heat and wait til the Bonitos stick to the bottom, once the Bonitos stick to the bottom it's done.
