I think everyone kinda puts on a rip roaring grill. They're looking for that perfect temp, and they don't normally hit it. I would say, turn the grill down, turn it down on lower heat and then let it rest. I think that's the important part is people don't let their meat rest long enough after grilling or roasting or any kind of cooking method. Give it some time to rest and relax and then slice it, and you're gonna have a gorgeous piece of meat.
