We're doing a rotini pasta with asparagus. So I'm gonna do a Chinese technique of searing meat, putting it aside and I know I'm gonna cook it a second time so I just want to cook it to rare. So see this meat is still kind of rare which is good that's what I want. [SOUND] Now we're gonna add the aromatics of this dish. And we're gonna add a little bit of garlic. We have green peppercorn which I love one of my faves, a lot of it. Scallion whites, scallion greens is gonna be for garnish. [SOUND] All right so this is blanch asparagus We just gotta just cut what, 2 inch lengths here. Rotini pasta. We add the meat back carefully add all the juice, right, you want all of that. [BLANK_AUDIO] Thank looks Good. [BLANK_AUDIO] You can all do that by the way. It's easy. And the reason we do this in restaurants is not to show up. We're doing this because in a real restaurant you have 15, 20 burners wherever. There's no place for us, spoon here and this. There is no cutting board. You have no place for utensils.
