My mom taught me the traditional perfect dumpling filling. Which is a combination of pork and shrimp. So you get good ground pork. You get fresh shrimp or frozen that's all right, and chop them up. Add a little bit of scallions, a little bit of garlic, ginger, sesamo, and soy sauce. That's it. Mix that all together. Try to make sure it tastes good. Either make your own dumpling wrappers or buy them. They're quite good the ones bought frozen. And then once you cook them up you can boil them, you can steam them, or you can pan sear, add water, and that's what's called a potsticker. But in any case, always eat it with a soy vinegar sambal dipping sauce.
