We'd just started cooking on New Year's Eve, and we'd done the same thing both years in a row, which is big court bouillon, whole artichokes, crab legs, truffles. We simmer the whole thing together and then eat with our hands in front of the fire with a glass of champagne and kick off New Year's Eve. It's the perfect evening.
