Olives are something that I love using in my cooking.
I'm of Greek heritage so I grew up eating olives,
all different kinds, predominately Kalamatas. They're beautiful because they're And
briny, and they give a lot of, kind of help
to cut through rich dishes. So I love to do
them with dishes that maybe are a little bit richer,
like a grilled lamb chop, with an olive relish, or
something of that nature. Really cut through the fat.
