To cook the perfect sausage, I think the most important thing to do is everybody wants to start it on the grill. I think that's typically a mistake because just you lose control a little bit. That being said I love grilled sausage cuz I love that crispy casing. So I would poach it for until the. At a very very low simmer. So the internal temperature of the sausage reaches about 140 degrees. I would do it in beer because that's just, I like beer. And then I would pull it out and finish it on the grill and get that really crunchy exterior. But to try to go from beginning to end on the grill, you get a little bit of inconsistency with textures and you want that Sausage has a lot of fat in it, so you want that fat to remain smooth and supple and delicious. So, if you poach it first, you can cook it through and really control that and then finish it and get that beautiful char. [BLANK_AUDIO]
