Feta is a wonder cheese. There's all different kinds of levels of it. I typically use feta cheeses from Greece. It's a barrel I enjoy the barrel aged style of feta cheeses. It's nice because it's a firmer cheese which gives it a lot of versatility. Especially in salads. Of course, that classic use of it is with tomatoes and shaved onions and olives and peppers. But my favorite [UNKNOWN] salad is with watermelon, with diced watermelon, some shaved onions, a little bit of fresh dill, and feta cheese. It was what I grew up eating as a child, and it's still my favorite salad of all times.
