[BLANK_AUDIO] The secret to juicy chicken is high heat cooking. So you could brine a chicken, I think that's a great idea. But no one really has time to brine a chicken. I think if you buy a good quality chicken and you're not afraid to turn that oven up as high as it can go. You want to get a crisp skin. I always like to start the chicken in a saute pan, breast-side down in the pan, then put it in the oven, high heat. Halfway through cooking, if it's about a 3.5 pound chicken, maybe 20 minutes into the cooking process, flip it over and put it right back in the oven, high heat. But I think that's the biggest mistake people make. Is that they are afraid of the heat. So high heat equals juicy chicken.
