[BLANK_AUDIO] Okay, so I think the biggest thing that the home cook to think about is when you're making that committment to do that one and a half hour, two hour braise and you really have so little time to work with but you made that committment, think about what you can do the next day with what's left over. It's just, that cold meat could be pulled and tossed with a little bit of chilled orzo salad with some artichoke and sun-dried tomato and all of a sudden you've got a great salad for the following day lunch.
