I do a shrimp boil every year. I take a pancetta and I drop it in the bottom of the shrimp boil pot. And it boils for a couple of hours. And I get Dungeness crab, and shrimp, and artichokes, and cardunes, and lemons and potatoes and I just do pot after pot. And we setup. Every surface in the house and outside and about 150 people come. And all day long you're just pulling pots and you're dumping them on the table, spreading them out. Bunch of different salts, and flavored salts and flavored salts and spices and hot sauces and And a bunch of my pins, a bunch of towels you just tie around everybody's head. When they get done they take these rags, take old sheets and tear them up and they just tie them around and you put everything in the middle, you roll the whole damn thing up, you throw in the trash, blast the cuisine, you're done.
