When it comes to highly spiced foods, I break my own rule. I tend to go big for big. And I learned this from Danny Meyer in New York. He pours one of my old line petit sirahs with his Indian food. And this thing's It's just a monster, it's a blockbuster, it's this Schwarzenegger like red wine, yeah, yeah. And I thought for sure I was gonna want something fruity and bright, and it just came after the spice and just pounded it down. It was like a rugby match in your mouth, it was fantastic.
