Other than not cooking with the wine that you wouldn't drink, other advise I might have, is not to over stretch your boundary a little bit. Cooking with a $100.00, $150.00 bottle of Chateau is not going to make your food that much better. If you really want to use a nicer wine, I tend to use it to finish. If I'm pairing with Cabernet, I'll finish the sauce with a little bit of Cabernet. Maybe just and ounce for eight ounces worth of sauce. They're going to bring forward that [INAUDIBLE] character.
