There are three rules for pairing food and wine. Never one, the most important one is like what you drink and drink what you like. Right? That's the perfect pairing of, of all time. Now, the other two components, and there's two schools of thought. Either you're going to compare the flavors with your wine Or you're going to contrast them. I tend to be a contraster. If I have something that's really rich, I want a wine that's really bright.
