[MUSIC] Hi, I'm Sissy Biggers.Throughout this series I'll be taking you behind the scenes with the Royal Caribbean International with the help of food and wine to showcase the art Of preparation through top culinary specialists from around the country. First up let's meet Matt Lewis and Ronotto Poliopheto of Baked Sweet Shop in Brooklyn New York. The duo left jobs in advertising to open a neighborhood bakery that turns out classic baked goods with a modern twist. Let's see why they've earned a cult following from sweet devotees from around the country. [MUSIC] I think everybody thought we were crazy. Yeah. When we left our jobs in advertising to go open a bakery, everyone was like, I you out of your mind? It's a small business, small businesses are very difficult compared to like the cushy corporate jobs we had. But in the end it all paid off. My mom thought I was insane. My mom's like well why did you go to college? [LAUGH] [MUSIC] Since a very young age I've always been into chocolate and sugar and butter over everything else. I spend a lot of time in the kitchen growing up. Once I moved out of the house I started cooking and baking for myself and I realize oh I'm not that bad. We definitely pull from family recipes, I know you have a great cheesecake recipe that is your grandmothers. Yeah, my grandmother did a cheesecake that is eight pounds of cream cheese in it. [LAUGH] I have A citrus bundt cake that is one of my mom's recipes that I love to make. With olive oil.>> Yep. It's an olive oil bundt and it's delicious. We love putting, you know, a little modern twist on something classic, something nostalgic. We'll usually kinda look back at recipes we really like. We kinda try to update them and bring them back with kinda like a little bit of a punch. We love pairing spices and chocolate. Ancho, Chipotle and matcha powder, which is a green tea powder, we use that in one of our cakes. [MUSIC] To put a smile on somebody's face, it makes the day go much faster and makes your life feel a little smoother and easier. So I feel like, you know, desserts. Best thing you can do.
