One little [UNKNOWN] trick of the trade that you can use at home, is to look for wines that are actually a little too sour on first sip, in order for them to taste just right with dinner. Because almost everything that we eat, is seasoned with salt, and salt naturally blocks our perception of acidity Wines that seem a little too sour on first sip almost always taste just right with dinner. Some liaes often recommend wines with extra acidity even more than they need for the salt when the dish has a high level of acidity from lemons, or fresh tomatoes, or vinegar aswell.
