When I think about a dish that is sort of puts my background with Harlem, with Sweden, with Ethiopia together, I think about really the hash that we do at Red Rooster. It's a lamb hash that we cook in Ethiopian spices. The hash is really a throwback to a Swedish dish that I grew up with called [UNKNOWN], which is potato Little bit of cut ham and onion, and then on top of it we finish up with beat and egg. That dish is one of my biggest seller and it sort of explains my life in one dish, on a plate.
