What I enjoy the most, is how democratic and how global the conversation about food is. And when I started, it was very much, little bit elitist, maybe only with France. And that was my hope, coming into this food world. And see, Durban cooking, see New York cooking, see Tokyo cooking, see Paris cooking at the same time. That for me, is why I love this industry.
