I would actually go with something like ox tail. You know, you can brace the ox tail, you can sear them up, clean and sear them up. And then you let them simmer for about an hour and a half. Then you can add in the potato, the carrots, all the things that you want in there. You can also add in cabbage and make it really, really hearty. That will taste delicious, day of, next day, and even a third day.
