Well, I think what breaks my heart very often is still that when I go to Africa, for example, and I cook every day, and we waste food in the kitchen. We do it as chefs. We put only the best pieces together, and I think about that wastefulness. What is our responsibility as chefs. And I have that in my mind cause I see it when I'm in Africa and also see it when I'm in America in some communities.
