I love escarole, sauteed escarole is one of my favorite greens to cook. It's so simple, you can put onions in it, you could put garlic, and if you want you could actually put all your vegetables in it. You could start off with carrots, onions, and celery like a regular [UNKNOWN], and a little garlic, saute it off, throw you greens in at the end. And you know you can finish off with a little bit of mustard. You can go any direction it's a fantastic green that is, it's durable, that can accept different flavors and it goes with almost anything.
