[MUSIC] Hi I'm Sissy Biggers and I'm going behind the scenes with Royal Caribbean International with the help of Food & Wine to learn from the culinary experts who excel at the art of preparation. Next, we'll visit master spice blender Lior Lev Sercarz of La Boite a Epices in New York City. When superstar chefs like Eric Ripert and Daniel Boulud are looking for new ways to bring creativity to their food, he's the man they call for custom spice blends that have the power to transform. [MUSIC] We're here at Le Boite which is home of La Boite [UNKNOWN] and Le Boite [UNKNOWN] At La Boite I do main things. Baking the biscuits everything is done here. The other activity is the spices and making the blends and packing everything Making a blend, the easiest way to compare it is throwing a party in your house. It's who do you invite? What would make sense together? First of all, there's the visual. Then, there's the grinding levels from very course to very fine. And then there is the assembly. Once they're all assembled Smell, look, taste until I'm happy. And even after that, you know, I might go back three or four months later and revise something. I can do what I want. That's the advantage. [LAUGH] The inspiration behind the spice blends that I create here at [UNKNOWN] Could be a person. A personal experience, a place. It's trying to tell the story using different spices from all over the world. Making spice blend allows me to be in touch with so many different people, whether they're home. whether they're in restaurants. I think that's the best thing that I could wish for myself is have all of these people use what comes out of here from the [UNKNOWN]. It's just a really fascinating world that touches against so many different aspects of, not only cooking, but life. [BLANK_AUDIO]
