Hi, I'm Letton Hopkins, executive chef of restaurant Eugene in Atlanta. At summertime I love picnics, and I'm going to share with you today, some simple picnic items. When I think picnics, I think roast chicken salad, it's a homemade favorite. The first step of course are roast chicken. We have this Gen Air oven back here Makes it very simple. Salt, pepper, a good hot oven. There's a chicken function on this oven. There's actually a probe in here. It lets you know when it's done, which makes it very easy. So you don't have to worry about it. For a chicken of this size, it's gonna take about 45 minutes. So after I've pulled the chicken from the oven and let it cool just enough to handle, I start pulling the chicken very similar to pulling barbecue. I'm also incorporating the roast chicken skin here cause I want that flavor. I also want some of that fat in here. And we just have all of our ingredients here together. What the French would say our [INAUDIBLE]. We start with chicken here. And fundamentally chicken salad is chicken and mayonnaise. So everything else is sort of added bonus to this. So we get the chicken in there. Got the beautiful skin. Of course, as you season the chicken, that adds a lot of your salt. So you don't need to really worry about adding too much salt. We have fresh ground right here, we've got our black pepper. Again, course fresh ground pepper is critical to the flavor of this dish. And then our mayonnaise. [BLANK_AUDIO] I like to get this stirred in a little first. To sort of get that consistency because ultimately we're just going to augment this basic recipe right here. Fresh shaved celery. I like the sweet and sour pickles, we use [UNKNOWN] pickles here. You can use bread and butter pickles. Chopped [UNKNOWN] any of your favorites, and then we have our aromatics. Fresh chopped tarragon, again, this could be basil, another great sort of [UNKNOWN] flavor, fresh chopped parsley, probably one of my favorite ingredients in this. In the grocery stores, fresh parsley improves your cooking immensely. Then scallions, this could be chives, this could be fresh shaved red onion or Vidalia onions. Just absolutely wonderful. And then lemon, the brightness of the lemon adds so much. Of course, you gotta protect for seeds, so squeeze it through your hands, and get that juice in there. So, we've put our chicken salad in our basket. We're going to go to our Jenn-Air fridge Advanced climate control with the different zones, with different temperatures. We got our beautiful cherry tomato salad, we got pimento cheese, required by law in Georgia. We're gonna load up our basket, put up our spritzer, and we're almost done except for some family and some friends and a good park on a sunny day and off we go. Remember, with a few special touches and the right JENN-AIR appliances, you can turn the ordinary into the extraordinary. [MUSIC]
