Hi, I'm Linton Hopkins from Restaurant Eugene in Atlanta. And today I'm gonna share with you some simple tips to elevate your typical summer burger to an elegant truffled feast. [MUSIC] When we talk about cheese burgers, we talk about beef. And here we've got the five ounce beef, Kobe beef. It's already got that perfect ratio of fat to meat that we want. First thing we need to do, add our truffles. We got them chopped here, adds a wonderful, haunting, earthy, savory flavor. We have our fat coming in the form of beautiful duck foie gras [UNKNOWN]. And this is where I like to get my hands into it and really mix it and fold it in. You don't want to work it too much, because then you make the beef tough. You end up with like a little mini meatloaf. And we want this to be a nice burger where we're gonna form just a little bit. Probably about four to six ounces per patty. Just pat that into a rough shape. Form the end with your thumb around like this, pushing the meat in. Creating your edge and then you have your perfect patty here. So you want to see all those elements on the outside cuz that's gonna give you that good crust. What's great about having a party like this with cheese burgers is you can get a lot of the work done ahead. So we already have in our Jenn-Air refrigerator some of these burgers already done. So we can just pull these out. It's actually better that they sit in the refrigerator. So the first thing we need to do is get the burners up. Get that griddle going nice and hot. You wanna be able to get a good char on that. Next thing is the seasoning. Little salt, little black pepper, very important. Buy whole grain black pepper and crack it yourself. Then we're gonna get that on to the griddle. [SOUND] That's the sound of flavor happening. If you don't have that sound, you're not gonna have that flavor. We wanna get that caramelization on it. [MUSIC] My JENN-AIR cooktop has an amazing downdraft function, so instead of smoke all flying around in grease particles, you can turn that on You can actually see it pulling everything straight down. While that's going on we have a nice rich, reduced, veal stock here we're going to fuse that with black truffles. Sort of grilling a little here. We're going to throw that in, stir that around in the pan. Just look at that. We're going to nappy that right over the top of the burger. After three to four minutes per side we're going to lay our cheese on. We have a [UNKNOWN] cheese, it's from the south of France. It's just gonna soften, and then we're gonna go to our bun. We have our bun here, [UNKNOWN] onions. Just go right off, right on top. We have our sauce, and this really is putting it over the top. Get some pieces of black truffle in there, and just look at that. And that's your upscale foie gras black truffle burger, and that's really an elegant burger.
