If you like a gouda or an aged gouda say, then maybe another kind of a nutty cheese that's all together different is manchego, a Spanish sheep's milk cheese. If you like goat cheese, go for one that looks like brie, for instance. There's a wonderful goat cheese called Humboldt fog. Pretty readily available. And yes, you're gonna pay a little more, but boy, do you get a pay off.
