My first big break was working for Chef Ray Taylor, and at the time we were at Jubilee Restaurant in Pensacola Beach. And there were actually two restaurants. The upstairs was the fine dining place that everybody wanted to be at. And my only way that I could come up with for a shot to get up there was to challenge Chef Taylor to a Fish cleaning contest and I bet him that I could clean the tuna as good as he could that came in the door. And if I did, I asked him to let me have a job upstairs. And so we cleaned these two tuna, and I did a good job.
