I think a perfect souflee is spectacular and I think Jacques Pepin would probably agree. I think it's a lost art. Very few people really understand the science that's involved in making a great souflee. So a perfect souflee, especially a Gran Marnier or a chocolate souflee or passion fruit souflee, I absolutely love.
