Fire, we definitely have an obsession with fire. Everything at the restaurant is cooked over fire, to some degree. We started using fire because we were getting to the point where we were roasting meats in the oven, and we were looking for something a little further in flavor. And so, we started forging, so. Wild foods and fire are kind of the first you can go to get the deepest point in flavor.
