One thing I love to do is stuffing the turkey in the way we used to stuff the turkey in Catalonia. Sausages, dried apricots, dried prunes, almonds, walnuts. We don't put bread, we don't put bread, people. We don't put bread. We saute the whole thing with brandy, We stuff the turkey with all these things, the turkey's telling me, oh my god, I've been stabbed with the best stuffing in the history of mankind. I'm a very proud turkey, and then we put it in the oven, the turkey, and believe me, ready to go.
