Chablis is, contrary to what a lot of people think,
it's not a jug wine made in California. It is
the northern most region of Burgundy that's actually closer to
Champagne than it is to the rest of Burgundy. So
Chardonnay is the main grape there. And typically the Chardonnay
that come from Chablis are really distinct. They have this
Sort of almost gun flinty, minerality because of this really
famous soil made up of fossilized baby oyster shells.
