I think one of the quintessential dishes would be a simple trout meuniere. Dust it in a little flour, into a pan with just a touch of olive oil instead of the butter. Then at the last minute, just a touch of butter, little bit of lemon juice. Let that sort of start bubbling up, little bit of chopped parsley right over the fish.
