[MUSIC] Hi, I'm chef John Besh and this is our Russian August here in New Orleans. I'm from just down the road. Everything down here in South Louisiana revolves around In the kitchen. There's this rich history, and this culinary heritage of New Orleans, and I knew this is what I wanted to do, at a young ages. There's a beautiful quality to New Orleans. Restaurants here are a cornerstone to a neighborhood. The Absinthe House is a beautiful place in the quarter These walls if they could speak. They just don't make bars like this anywhere else. I love Galatoire's just down the street. The servers are the ones who really orchestrate the meal for you. They dictate what's fresh, what just came in, what they're going to do for you. It's the quintessential Noology. Restaurant. You wanna see real jazz? You gotta go to Preservation Hall. Their philosophy's very simple, preserve this great style of jazz that was born here in New Orleans. It's a great place of American music, period. This clean slate That we were left with after the hurricane. It's our job as a city to make sure we [UNKNOWN] this culture. I can't think of a more unique place to visit here in this country than New Orleans.
