Here's a quick demonstration on a very simple yet very very tasty olive vinaigrette. We'll start with some pitted olives, these are kalamata olives, and a few anchovies. And what we're gonna do is keep chopping. Or this can be done in a food processor, I like to do it by hand. And basically just smashing this into a paste. Little anchovy goes a long way, but anchovies and olives are really, really good buddies. They like each other. So we have this little paste here, and then with the knife I like to Just keep on smashing it. Then this paste can go into a bowl. Squeeze the lemon juice, a touch of sherry wine vinegar and extra virgin olive oil. [BLANK_AUDIO] [SOUND] It's a simple and extremely tasty kalamata olive and anchovy vinaigrette. [BLANK_AUDIO]
