My favorite stuffing has sausage in it, but these days we make two stuffings, we make one with sausage and we make one with just vegetables. When I was growing up, my father lived with a woman who was a vegetarian and we use to roast whole blue Hubbard squash stuffed with stuffing for her. And then we would roast a turkey for ourselves. And her stuffing was always just as good as our stuffing with no meat in it. So I make both stuffings in honor of the early years.
