I really have two gotos. And the one is the New England Boiled Dinner, perfect cabbage, carrots, potatoes, a beautiful corned beef, simmered, sliced. The other one is the Italian, it's a timbal or a timpano. You boil pasta and toss it with eggs and nutmeg and cream. And cheese and ham and spinach and then you've pack it in a spring-form pan and bake it like a cake. And then you can eat for two or three days.
