[MUSIC] Hi, I'm Sissy Vigors and I'm here showcasing the art of preparation with Food & Wine and Royal Caribbean International. After studying pastry in France, Jean Francois Bonet moved to New York City to make desserts for such legendary chefs As Laurent Tourondel and Danielle Bulut. Today, he's known as a true artist, working in the mediums of sugar, spice, and chocolate, at his own shop, Tumbador, where every confection is an edible work of art. [MUSIC] My name is Jean-Francois Bonnet. We're in Brooklyn, New York, at Tumbador Chocolate. Tumbador is a private label chocolatier confectioner. We have our own brand and we also create brands along with our customers and partners. Before I started this I was making the pettifores like Danielle and then one summer I met Michael Opmen that had the idea of the product label, Chocolate Company. When you reach a level as a official chef in Daniel, where you go from there? You have top of the restaurant game so you have to point something else to grow and take another road. And that's what I did Chocolate is about love. You love what you do, you're passionate about what you do. The passion is what makes a great chocolate bar, is what sets it apart. In the fact that you compare it with so many things when you do it right, it's just a fantastic food. The chocolate makes me smile every day it's a big part of my life and it's thoughts at night it's talking about it with friends with family. My confections are my babies you know?
