I'm Justin [UNKNOWN] from Food and Wine's test kitchen. Join me as I demonstrate mad genius tips. [MUSIC] Traditionally, when you Trusted chicken, use kitchen string. But what if you don't have kitchen string? The first thing you're gonna wanna do is fold the wing tips back. [MUSIC] Now the genius part. We're actually going to trust the chicken using its own spin. I know. It sounds crazy, but it actually works. Grab one side of the excess skin that surrounds the cavity of the chicken. You're gonna take a small, sharp paring knife, and you're gonna make a small incision in the skin. [MUSIC] Just like that Then you're going to take the opposite drumstick and you're going to insert it into the little slit. Just be careful not to tear the skin. And now, on the opposite side, you're gonna do the exact same thing. Just like that, you've trussed a chicken without any kitchen string. We're just gonna pop this into a skillet.
