F&W Test Kitchen whiz Justin Chapple demos a neat trick to revive stale brown sugar.
[MUSIC] I'm Justin Chapple from Food & Wine's test kitchen, join me as I demonstrate Mad Genius Tips. You're super excited to be baking, you can't wait to have that delicious treat. So you head to the pantry, you grab that box of brown sugar. And then the nightmare happens. Your ground sugar is like this. [SOUND] It's crumbly, it's dry, it's crispy. Well, I've got a mad genius tip that's gonna revive your brown sugar. Take a microwave safe bowl, and you're going to put your brown sugar in it. The next thing you need to do is take some paper towels, and you're going to get them wet You're gonna ring them out. Cuz you just want the paper towel to be slightly damp. Just like that. And then lay it right on top of your brown sugar. Now we're gonna pop this in the microwave. And we're gonna check it every 20 seconds until it's pillowy and soft. But don't go too long cuz you don't wanna melt it. [MUSIC] Okay. So, now we're checking it and we can see that it needs to go a little longer because, although some of it is nice and soft, we have these other pieces that are still hard. So, we're going to pop it in for another 20 seconds and then check it again. [MUSIC] This is ready. Okay you take Paper towel off. And look at that. It's perfect. It's like brand new.
