[MUSIC] I'm Justin Chapple from Food and Wine's Test Kitchen. Join me as I demonstrate mad genius tips. Every time I pass by a bakery, I see these beautifully decorated cupcakes. My favorite are the swirled, when they get two distinct colors to swirl on the top of the cake. But I've learned a mad genius tip for making them full perfecle. We're gonna start out with large piece of plastic wrap nice and flat on a work surface. Spoon the frosting right down on the center. Now I'd like to use small offset spatula to smooth the top of the frost After you've got your first color you're going to move onto your second one and you're going to do the exact same thing, making sure its parallel to the first color. And smooth it out. Now, grab the plastic wrap on the sides that's closest to you and you're going to fold the color that's closest to you over the second color to shape it into a log. Now, gently twist the excess plastic on both sides of the log. And that's gonna seal it in. Then take a pastry bag, and you're going to take your frosting, drop it right into your bag. Use the excess plastic to guide the frosting into the tip of the pastry bag, just like that. Then just press it down and cut the excess plastic. Then you're gonna want to pop this in the fridge for 15 or 20 minutes until it's just firm. And now comes the best part. I get to decorate the cupcakes. I'm using chocolate and. Watch what comes out. It's gonna be pretty amazing. Start piping right in the middle of the cupcake and with steady pressure you're gonna slowly work around to the outside. Check that out.
