Justin Chapple’s frico, or cheese chips, are deceptively easy to make—all you need is a microwave and lots of Parmesan.

I love to throw dinner parties. And sometimes I'm known for making them a little more elegant. And one of the ways I do this is with Frico. I have a fool-proof mad genius tip for making them in the microwave. [MUSIC] So, I am starting with finely grated parmesan cheese. And I'm going to add two teaspoons of finely chopped thyme. And then a lot of black pepper. Gonna add about a teaspoon. [SOUND] And I'm just gonna mix that really well with my spoon here, and the trick here is, I'm using a microwave safe ceramic plate. You use the back of the tablespoon to just even it out Once you've formed your frico you're gonna pop it in the microwave, full power about 40 seconds. Ha! I'm getting all this kinds of crazy cheezy sense. And you're just gonna scrape under it. And transfer it right to a rack to cool. And as they cool they're gonna get super crispy, just like we want. I've made quite a bit cuz I love them and I love to serve them on cheese boards with salami. I also love to put them on top of warm soup. But, because I can't wait anymore I'm going to eat one of these now. Do you hear that? Do you hear that? That is some mad genius freedom. [BLANK_AUDIO]
