F&W Test Kitchen whiz Justin Chapple demos a genius trick for making brown sugar at home.
[MUSIC] I'm Justin Chapple from Food & Wines Test Kitchen. Join me as I demonstrate Mad Genius Tips. It's late on a Saturday and you're craving chocolate chip cookies. You head to the pantry only to realize that you're completely out of brown sugar. Well I have mad genius tip to show you how to make brown sugar at home. It starts with one cup of granulated sugar. Then, one of my favorite ingredients, molasses. This is unsulphered molasses, and we're adding one tablespoon. Now, take an electric hand-held mixer like this one, and you're going to incorporate the molasses into the sugar. Start out slow so you don't get sugar everywhere. What you'll see happen is that the molasses starts to form these little clumps in the sugar and you're going to take a rubber spatula. You're going to mash the molasses into the granulated sugar. We're going to switch back to the mixer. And the more you mix, and the more you use the rubber spatula You'll notice that it's forming like brown sugar now what a lot of people don't know is that this is actually what brown sugar is. This is what you're buying in the box, but we're making the freshest at home. [MUSIC] It's making my mouth water. [MUSIC] Now check that out. You're left with this beautiful fluffy light brown sugar. If you want dark brown sugar, just add 1 more tablespoon of molasses.
