[MUSIC] I'm Justin Chapple from Food and Wine set kitchen. join me as I demonstrate Mad Genius Tips. When filleting small fish like trout or branzino it can often be a tedious process. Once we start removing the fillet we're so focused on not breaking any of the bones. So, this genius tip will show you how to fillet the fish. Very quickly and we'll fished the bones out later. So the first step is to make a cut right behind the cheek of the fish, just like this. Then, you're gonna slide your knife under the fillet. Once you have your knife flat and you can feel that it's sitting on the spine of the fish. then you know you're in position. At this point you want to press gently but firmly on top of the fish, keeping your fingers up, and with a sawing motion you're going to go right through the bones and remove your filet. [MUSIC] Just like that. Now you're gonna wanna flip the fish and you're gonna do the exact same thing on the other side. [MUSIC] And once your filet has released, you have this gorgeous, beautifully filet fish. [MUSIC] [BLANK_AUDIO]
