[MUSIC] I'm Justin Chapple from Food & Wine's test kitchen. Join me as I demonstrate mad genius tips. [MUSIC] What a lot of people don't realize is store bought dried herbs actually do have a shelf life. But with this mad genius tip, you'll always have freshly dried herbs. Now, what's the key to this trick? A microwave. We all have one. And all you're gonna do is take a nice clean paper towel and some free sprigs of dried herb. I have rosemary, oregano, one of my favorites, and thyme. I'm gonna go ahead and lay them in a single layer on top of my paper towel. You want them spaced out so they're not touching. That's really important for the drying process. And now we're gonna go ahead and pop them in our microwave. [MUSIC] I'm gonna microwave the herbs in 20 Respective intervals, flipping them and checking each time until they're perfectly dried. [MUSIC] So, I've been checking my herbs after each interval. They've been in for about two minutes but I think they're ready. I'm gonna go ahead and show you what you're looking for. Let's start with the rosemary. Even just holding the rosemary up, you can see that the leaves are nice and firm, and if you just start pinching them, you'll notice they fall right off. The stem. It's pretty cool.
