[MUSIC] Hi, I'm Suzy Badgers, here with Food and Wine and Royal Caribbean International celebrating the art of preparation through an array of the countries innovative culinary artisans. Let's meet beer ambassador Garrett Oliver to learn what makes the perfect pint. The author and brew master of the Brooklyn Brewery is the ultimate authority on the subject of beer. [MUSIC] I never really thought my love of beer was gonna turn into a career, and actually the thing that worried me the most As I was taking a hobby and turning it in to a job. I said to myself, I love it so much and then it's gonna become work and is that gonna ruin everything. And in fact, it does the exact opposite. The pressure is on yes, but that's actually turned out to be a great thing. And back in the early 80s, American beer had really declined and we had nothing but one very light beer. So, I didn't start making beer because I was interested in making beer. I started making beer because I wanted something with flavor. [MUSIC] Just as a chef will go out and travel around the world and bring back ideas, bring back spices, we're doing the same thing. And we're looking at new ingredients and we're saying okay, I want to express this ingredient in a beer and show people something new. I think what Brooklyn Brewery's beers all have in common is a sense of balance and a sense of structure. We don't have a house flavor but I do think we have a house character, and that house character is elegance. What a lot of people don't realize is that the Booman craft beer is not really a trend and it's not a fad. It's a return to normality. We used to have hundreds and hundreds, thousands of breweries in the United States, and it's only recently that we've started to get that back. It is actually a renaissance is what's going on. [MUSIC] I think that what makes brewing so much fun is that is half art and its half science. The art actually gives you something to say. The science gives you the ability to say it. [BLANK_AUDIO]
