Has anyone ever eaten Merguez sausage? This is it. Nice long links. I'm gonna make a really simple dish that you can easily do at home with it, braised chickpeas, some onions, and then I'm also gonna add a little bit of [UNKNOWN] as well. I'm gonna start, and I'm gonna just saute these a little bit. Brown them up on all sides, and than I'm gonna braise them in the oven later with my chick peas. Alright, so I've cut them in about 5 inch. Five inch length. Which will just make them really easy to use later. And you can just saute them up when your pan gets nice and hot. You don't really want to cook them through here, you're not looking to overdue them. You just want to get them brown a bit so that when you braised them in the oven later with your chickpeas and chicken stock it all sort of comes together and everything sort of permeates those delicious flavors. I'm gonna take my- Beautifully brown [UNKNOWN] sausage out of my pan. I'm gonna add a few other delicious things to this glorious fat. A can of chick peas, super easy. Some garlic, and some mist onions. And just a little bit of cumin give it some flavor. You want to get the onions a little bit soft and once they soften in about three to four minutes. You're going to add some chicken stock. Put the [UNKNOWN] back and it's going to go in the oven. These are starting to soften. I'm going to add back my [UNKNOWN] and chicken stock. Season up the chickpeas and onions a little bit. And then this is going to go into the oven. And [UNKNOWN] all of that juice on the bottom, that chicken stock mixture is almost gone. So I'm gonna finish off my dish. I'm just taking a little handful of mince just to garnish. And then I've taken some harissa and some and some Greek yogurt and it's just gonna go on top. And then I'll garnish it with the mint. So this is what it looks like when it comes out of the oven. It's all braised down. The chickpeas, the onions. And then of course the sausage. A little bit of the yogurt on top and some fresh mint. [LAUGH] There you go. Cool. [APPLAUSE] [BLANK_AUDIO]
