[BLANK_AUDIO] Lay the sheet of nori on a bamboo mat.
Using hands that have been moistened in water and seasoned
with rice vinegar. Scoop up the sushi rice. Gently form
the rice into a loosely packed palm width log. Place
the log at one edge of the nori and begin
spreading It across. Continue spreading the rice, re-wetting your hands
as necessary until an even layer covers all but a
one quarter inch border at the top edge. Spread a
small small amount of wasabi on the middle of the
rice. Lay the filling along the center of the rice.
[BLANK_AUDIO] Roll the bamboo mat up and away from you,
using your fingers to hold the filling in place as
you roll. Press gently on the roll's top and sides
