So, today we're gonna peel a couple shrimp. And the easiest way I find, to do this, is just to do a little snap on either end of where that tail meets the rest of the shell. And just peel back that shell, include all the legs and everything down the base and the body of the shrimp. Have a paring knife, and just cut this back and then clean out The entire length of the shrimp and I just rinse it in that little bit of water and I pop it right in an ice bath. And you'll notice that I've reserved all these shrimp shells for a soup or stock or something that I can use in the future because there's a lot of flavor inside these
