So I'm Scott Coner from Scarpetto restaurants and what I have here today is some panchetta. And panchetta is essentially cured bacon that's unsmoked and Italians wrap it in this circle. Normally what I do if I walked into a deli or a butcher I would ask them to slice it for me. And then in order to crisp it up I would have it laid out just like this on a sheet tray in a preheated oven of about 375 degrees. And then just unravel those circles so they look like this on the tray. Pop this in the oven. And I've had another in there for about between five to seven minutes. It'll crisp up nice like this. And I'll use it for anything I would use bacon for.
